Sesame Grilled Beef - {Bulgogi} Recipe - Cooking Index
Pork reigns in China, but in Korea, beef is the most favored meat. If you've eaten in a Korean restaurant, perhaps you've tasted bulgogi, the most famous beef dish of all. On the show, I cook this on a dome-shaped Genghis Khan grill. You can cook it directly on your barbecue or under the broiler, or even sear the meat quickly in a frying pan.

Marinade | ||
2 | Green onions - minced | |
1 tablespoon | 15ml | Minced garlic |
1 teaspoon | 5ml | Minced ginger |
1/4 cup | 59ml | Soy sauce |
3 tablespoons | 45ml | Dry sherry |
4 teaspoons | 20ml | Sugar |
1 1/2 teaspoons | 7.5ml | Toasted sesame seeds - crushed |
1 | Freshly-ground black pepper | |
Cooking | ||
1 tablespoon | 15ml | Sesame oil |
Cut the beef into thin slices, about 3 inches square and 1/4-inch thick.
Combine the marinade ingredients in a medium bowl. Add the beef and stir to coat. Cover and refrigerate for at least 3 hours or overnight. Sprinkle with sesame oil just before cooking.
Place the meat on a lightly greased grill 3 to 4 inches above a solid bed of low-glowing coals. Cook, turning once, until just browned on both sides, about 2 minutes total. Serve immediately.
